In the built-in grapher on Mac devices, expressions such as $x^2-xy+y^2$ (without z= at the beginning) in the 3d grapher are graphed as many spheres of varying sizes, forming a sort of 3d grid.

How is the grapher interpreting this expression? When I add the z= to the beginning of the expression, it graphs what one would expect: an elliptic paraboloid.
